I’m sure you’ve heard of Corba before. It’s a restaurant in New York City that serves up some of the best classic Turkish dishes and desserts. You might have also heard about my first experience there, which happened a few years ago when I went with friends who had never been before.
The owner’s son is an amazing chef and chef de cuisine, but he really shines with his dishes—especially those made with spices like cardamom and turmeric. We ordered multiple orders of meatballs (which are called “meat kababs”), fried cauliflower (“yaprak sevada”), Turkish coffee made from beans grown in Anya Kadıköy (an area on the Asian side of Istanbul), pastries stuffed with walnuts (“kulba”), and baklavas filled with cream cheese (“majma”).

The most common soup in Turkey is called açık ıskender kebap which means grilled filed meat on skewers. It can be eaten as a main dish or served together with bread, fried potatoes or rice at various restaurants throughout Turkey
Turkish coffee is a dark, thick, bitter brew. It is served in tiny cups and drunk in several small sips. The coffee is accompanied by a glass of water and a small cookie (known as baklava).
